5-Day Baking Workshop

Duration: 5 days

This workshop is for baking enthusiasts who want to learn how to bake and decorate cakes but cannot attend a full course. An extensive 5 day course which cover baking cakes and pastries. A basic cream piping cake decoration is also being introduced. The course also gives students a further study in bread making methods. Learn the special techniques involve in straight dough, sponge dough and no time dough.

Day 1: Cakes

  • Creaming Method: Chocolate Cake, Butter Cake, Marble Cake
  • Foaming Method: Chiffon, Sponge, Angel Cake

Day 2: Pastries

  • Apple Pie, Caramel Tart, Short Dough Cookie, Cream Puff and Eclairs
  • Chocolate Chip Cookies, New York Cheese Cake

Day 3: Breads

  • Cinnamon Roll, Sticky Buns, Loaf Brioche, Ensaymada, Cottage Cheese Rolls

Day 4: Icings, Piping and Borderline

  • Icings: Buttercream Icing, Boiled Icing, Royal Icing

5-Day Fondant and Gumpaste Workshop

Duration: 5 days

Day 1: Basic Fondant Workshop, (2-days) 9:00am – 3:00pm (P2,000.00/participant, Minimum of 6 participants)

For many cake decorators, using easy-to-shape, ready-made fondant icing is one of the most pleasing ways to decorate a cake. In this class, you will learn the basics that give your cakes a distinct and elegant look. You will learn to cover and border a cake and make fondant-icing decorations.

  • Bake pound cake
  • Prepare royal and fondant icings
  • Crumb coating the cake
  • Cover cake with fondant
  • Simple fondant appliques

Day 2&3: Advanced Fondant Workshop, (2-days) 9:00am - 3:00pm (P4,200.00/participant, Minimum of 6 participants)

This course covers tools and equipment, preparing the cake, crumb coating the cake, covering the cake (real and dummy). Learn how to decorate fondant cakes using borders, various drapes, ruffles, and lace.

Day 4&5: Gumpaste, (2 days) 9:00am - 3:00pm (P2500/participant, Minimum of 6 participants)

You’ll discover one of the most exciting and satisfying ways to decorate a cake. CIC chefs will lead you every step of the way as you create amazing hand shaped flowers, beautiful borders and bold accents using these easy-to-shape icings. As you learn each technique – an artful bow, mum, rose, carnation, calla lily, rosebud, daisy, and embellished borders – you’ll be closer to your crowning achievement: A Workshop Cake that showcases your skills. The confidence you’ll gain as you decorate with gum paste and fondant will enable you to create cakes that will add excitement to your family celebrations for years to come.

1-Day Chocolate Fantasy

Duration: 1 day

This is the perfect introduction for anyone new to working with chocolate, or wishing to develop existing skills. Learn the secrets to creating beautiful and delicious chocolate cakes. Recipes include Chocolate Decadent Cake, Chocolate Truffle Cake, Chocolate Mousse Cake, Black Forest Cake and Chocolate Concorde Cake.

 

1-Day All About Breads Workshop

Duration: 1 day

Pricing: P1,800 (Minimum of 6 participants)

This course provides a basic study in the art and craft of bread making. Topics        include pertinent formulas and techniques associated with naturally leavened loaves, Focaccia and other breads. Upon completion, students should be able to prepare artisan and specialty breads that meet or exceed the expectations of restaurant and retail publics. Recipes include Foccacia bread, Baguette bread, Banana Nut bread, Dinner rolls, Cinnamon bread roll and Pandesal.

 

1-Day Basic Fondant

This workshop teaches individuals how to create a beautiful basic decorated cake.  Decorating and icing cakes will be emphasized. Our basic fondant recipe creates a beautiful, smooth, malleable, and super-white fondant for use with cake decorating, candies, and cupcakes!

 

2-Day Advanced Fondant

Duration: 2 days

This workshop is designed to introduce you to these great mediums and teach you techniques to make cake creations that you never thought possible!  You will be able to create:

  • Stunning new Fondant/Gum Paste Flowers including Carnations, Daisies and Fantasy Flowers
  • Immaculate smooth surface cakes and cake boards using rolled Fondant
  • Various garland and ruffle borders - from ribbons and pearls to embellished ropes and punched strips
  • The ever-so-popular "Draping" effect that mimics cascading fabric

2-Day Gum Paste

Duration: 2 days

After completing Decorating Basics: Basic and Advanced Fondant Workshop, 3 day Gum Paste is the next workshop course you can choose. Learn how to bake mouth watering just-out-of-the-oven baked brownies, cupcakes, cookies and cheese cakes. The step-by-step instructions presented in these workshops are easy to follow and understand.

    In this workshop you will learn to make delicious Ganache Brownies, Blonde Brownies, Cream Cheese Brownies, Serendipity Brownies, Chocolate Chip Brownies and Rocky Road Brownies.

  • Half day workshop on Cupcakes
    Cupcakes are delicious treat that increases the fun of holiday celebration. By the end of this workshop, you will be able to bake perfect and delectable cupcakes, such as Butter Cupcakes, Chocolate Cupcakes, Carrot Walnut Cupcakes, Red Velvet Cupcakes and Strawberry Cupcakes.

  • Half day workshop on Cookies
    Cookies are a fun to prepare and delicious to eat. In this workshop, you will learn to bake Chocolate Chip Cookies, Oatmeal Cookies, Florentines, Butter Cookies, Peanut butter Cookies and French Macaroons.

  • Half day workshop on Cheese cakes
    This workshop covers recipes of great tasting cheese cakes. By the end of this workshop, you will learn to prepare the fabulous and delicious cheese cakes, namely New York Cheesecake, Blueberry Cheesecake, Strawberry Cheesecake, Coffee Cheesecake, Chocolate Cheesecake and Marble Cheesecake.
